Let me first start by commenting on my previous post. I haven’t had the heart to write anything since then, although I have plenty of posts in the works. A week after that frost, we had a surprise frost. Everything that miraculously survived the first frost, died on the second one. Goodbyes were issued to tomatoes, peppers, and eggplant. Luckily, we still had a good amount of cold hardy items.
Now, back to the present. Last night after CSA delivery, I came home hungry hoping Matt had something in the works. He didn’t. Instead he was cleaning. I hate to clean, so I didn’t say a word about dinner. Instead, I went into the kitchen and opened the fridge. My resulting dinner was excellent!
I knew it was going to be a pasta or a salad…I went for pasta since it was a chilly night. I got some water going on the stove for the spaghetti and set to find the sauce. We made some pizza sauce the other night and so I decided to make a spaghetti sauce from that. Our pizza sauce isn’t the very smooth, sweet sauce I typically associate with pizza. Ours is more like a marinara with small chunks of tomato and infused with a basil cube. From there I pulled out some mushrooms, onion, garlic, oven-dried tomatoes, bacon, kale, yogurt, and feta cheese. I started by sautéing the bacon (probably about a handful of chopped bacon). Once cooked, but not crisp, I removed the bacon and added the sliced onion (1/4 onion) and 1 clove chopped garlic to the pan. After about a minute, I added sliced mushrooms (2 handfuls). Sautéed for a couple minutes and added a little wine (red or white will work) to scrape up the bits from the bottom. I added the oven-dried tomatoes (1/4 cup) and let it go for another couple minutes before stirring in the sauce (2 1/2 cups or so), 2 tablespoons of yogurt, and a handful of feta. Once it was all nice and bubbly, I added an entire bunch of kale (washed, stems removed, torn into pieces) and covered with a lid to let the kale steam for a couple minutes. I stirred the kale into the sauce, drained the pasta, stirred it into the sauce, and we were ready!
It was really quite incredible and tasty…and a great source of greens! I made enough pasta for 4 servings so I could bring some for lunch. It was pretty quick and very good. For those of you still working to incorporate kale, this is a great option!
