Shrimp in Tomato Sauce

I finally pulled out the last bag of whole, frozen tomatoes. Until a couple years ago, I didn’t realize you could freeze tomatoes. After a quick rinse, I freeze them in a single layer on a cookie sheet. Then I put them in freezer bags and freeze until I’m ready to use.

For this particular sauce, I started with some sauteed onion and garlic. Added a little white wine and then the tomatoes. Added water and some dried herbs and then let it simmer.

The day before, I’d purchased some fresh shrimp from Dakotamart. It’s so nice when they order fresh seafood. Most Friday nights I stop in to see what’s new. Anyway, Matt started pulling produce from the fridge and counter including zucchini, tomato, fennel, garlic, parsley, and rosemary.

After a quick saute, he added the shrimp. Once they were cooked, we stirred in some tomato sauce. Served it with some crusty bread and it was awesome!

Shrimp in Tomato Sauce

Tomato Sauce:
– Yellow onion, chopped
– 2 garlic cloves, diced
– Splash white wine (chardonnay works nicely)
– 3 lbs tomatoes (frozen whole or fresh, peeled & quartered)
– 1/2 Tbsp dried oregano
– 1/2 Tbsp dried thyme

  1. Saute onion in 1 Tbsp olive oil, over medium-high heat until it softens. Add garlic and continue to saute for another minute or so. Add splash of wine and saute until evaporated.
  2. Add tomatoes, oregano, thyme, and water to cover. Bring to a boil and then simmer until reduced by half and tomato sauce has nice consistency. Season with salt and pepper.

Saute:
– 1 small zucchini, halved and sliced
– 1/2 fennel bulb, chopped
– 1 tomato, cut into 8 wedges
– 2 garlic cloves, diced
– 1 Tbsp chopped, fresh rosemary
– 1 lb raw shrimp, peeled & deveined
– 1 cup tomato sauce
– 2 Tbsp chopped, fresh parsley

Saute zucchini and fennel in 1 Tbsp olive oil over medium-high heat until tender, just a few minutes. Add garlic and continue to saute. Add tomatoes and rosemary. Once tomatoes start to break down, add shrimp. Once shrimp are cooked, stir in tomato sauce. Make sure shrimp are cooked through, top with parsley, and serve.
